Vegetable Soup Recipe!

Diana and I will be making Vegetable Soup for the Potluck!
(Sorry this is late both of us were sick when it was assigned. Diana is still sick and will most likely not be back this week, appendicitis.)

Ingredients:
2 table spoons olive oil
1 large yellow onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3, 14.5-ounce cans low-sodium chicken broth (sub vegetable broth)
1/2 pound Yukon gold potatoes, cut into 1-inch chunks
1 table spoon fresh thyme leaves (1 teaspoon dried)
1/2 teaspoon kosher salt
1, 14.5-ounce can diced tomatoes
1/4 pound green beans, cut into 1-inch pieces
1 cup chopped broccoli
1 baguette, sliced and toasted (optional)
Grated Parmesan (optional)
